2 | cups | potatoes, peeled and chopped | |

1 | can | (14.5 oz.) chicken broth | |

1 | can | (14.5 oz.) diced tomatoes | |

1/2 | cup | carrot, chopped | |

|||
1/2 | cup | celery, chopped | |

2 | teaspoons | Italian seasoning | |
|
|||
1/4 | teaspoon | ground red pepper | |

3/4 | lb. | (12 oz.) fresh or frozen cod, cut into 1-inch pieces | |

In a large saucepan, cook bacon until crisp; drain fat, reserving 1 tbsp. in pan with bacon. Cook onion in drippings until tender. Stir in potatoes, broth, undrained tomatoes, carrot, celery, Italian seasonings and ground red pepper. Bring to boil; reduce heat. Cover and simmer for 15-20 minutes or until potatoes are tender.
Stir in fish. Return to boiling; reduce heat. Simmer for 3-5 minutes or until fish flakes easily when tested with a fork.
